Sweetcorn Soup (Julie Biuso)

Put a chopped onion, 1T oil & 1T water in a saucepan, cover & cook gently til tender & translucent 10m approx.

Add 1 crushed garlic & 1T grated ginger, cook 1m.

Remove husks & silks from sweetcorn and slice kernels off cob with a sharp knife.

Add to pan with 2 diced agria potatoes, 3/4t salt & 1.25L veg stock or water.

Bring to boil then simmer partially covered for 45m.

Whizz half or all of the soup as to your texture preference, taste & adjust salt then stir through 100ml cream.

Serve topped with smoked paprika, lime zest & sea salt OR chopped jalapenos & fresh coriander.
