Place 700g chopped broccoli and spinach (including leaves & stalks) in a large pan with 1 small chopped onion, 1 small potato, peeled & chopped & 2.5c stock.
Bring to boil, cover & simmer until the vegetables are tender.
Cool before blending (otherwise the steam could push the lid of your blender off and spatter soup over your kitchen) and return to pan.
Add 1c cream, s&p and warm but don’t boil.
Serve drizzled with olive oil, lemon wedges on the side.
