Beetroot Chocolate Muffins – refined sugar & gluten free

Blend the following ingredients until smooth:

1/3c coconut oil

1/3c honey

1/3c cacao

1c ground almonds/flour of your choice (I use wholemeal spelt)

1 small/medium beetroot finely grated

2T yoghurt

2 eggs

few drops vanilla essence

1t baking soda

1t apple cider vinegar

Add a handful of walnuts if you fancy & pulse once to combine.

Pour into muffin tins & bake at 170C for 7-10m.
