Guacamole (avocado dip)

This is great as a chunky dip, putting the avo stone in the serving bowl will help to prevent discolouration.

Chop by hand or use a food processor to finely chop ½ red onion, 1 red chilli (optional), 3T coriander leaves & 1/2t salt to a rough paste.

Halve, stone & peel 3 avocados and roughly mash. Stir in the onion paste & 1c diced, fresh tomato.
