Herb & Weed Pesto

Use approx 2c herb leaves, include parsley, basil, coriander, rocket, nettle, sorrel, dandelion (not heaps, it’s quite bitter), puha, whatever!

Soak 2c raw almonds/walnuts or use unsoaked, lightly toasted ones or sunflower/pumpkin seeds.

Blend these together with herbs, 1/2c olive oil, 2-3t salt, 1-3 cloves garlic & juice of 1 lemon, zest of ½ lemon.
