Kale with Lentils & Salmon

Chop a bunch of kale and wilt with a bit of water in a covered pot for 30 seconds or so.

Drain the kale and reuse the pot to sauté half a red onion in a bit of olive oil.

Add salt, pepper & cumin.

Add a tin of drained lentils or same amount of pre cooked lentils and the drained kale.

Simmer the lentils and veg whilst you sauté 2 pieces of salmon with some garlic and olive oil.

Add some thickly sliced tomatoes to the salmon pan right at the end for a minute or so.

Add some torn basil and mint leaves to the lentils and kale, then serve with the salmon & tomatoes on top.
