Kumara & Potato Pancakes

Put 1c grated kumara & 1c grated potato ina  bowl.

Sprinkle with salt & leave to stand for 15m (the salt will draw out the moisture from the root veges).

Rinse & squeeze out then combine with:

1c grated carrot, 4 beaten eggs, 1/3c flour of your choice, 1t salt, 2T grated onions, 1/4c chopped parsley, dash of nutmeg & juice of 1/2 lemon.

Shape into patties & fry in butter/coconut oil until crispy & well browned.

Serve with sour cream, tomato chunks, vege sticks . . .
