Bake them & fill with your favourite stuffing – we love the obvious baked beans & grated cheese but have you tried ricotta & sundried tomato, sauted silverbeet & feta, caramelised onions & mushrooms & blue cheese?
Or try stuffing baked kumara with cinnamon cashew cream & sage, goats cheese & honey, or a quinoa mix including onion, kale, slivered almonds & cranberries.
Try chopping & roasting them with olive oil, rosemary & thyme.
Grate them & make a delicious potato rosti (European potato cake).
Mash them up adding leek & greens for a kiwi take on colcannon.
