Ruby’s Banana Pikelets – GF, DF, refined sugar free.

In a bowl combine the following:

1c spelt flour (or flour of your choice)

1t baking powder

1/4t salt

1t cinnamon

In another bowl combine the following:

1 mashed banana

1/2T honey or maple syrup

1/2c almond milk (or milk of your choice)

1 egg

Mix the two bowls together & add some fresh/frozen blueberries (or berries of your choice).

Drop tablespoons of your batter into an oiled frying pan, wait for little bubbles to appear on the surface of each pikelet before flipping.

Serve with coconut yoghurt, brown rice syrup, apple puree, chopped fruit or whatever you fancy.
