It’s December and the New Potatoes are cranking!
But which variety is best for which type of cooking?
Here is a guide to our potato varieties:
Agria – A well known variety of spud which is low in water & high in starch. It has a creamy, floury flesh & is best for baking, roasting, making chips & wedges & mashing.
Desiree – An all purpose potato, not too floury or waxy with a pinky red skin & white flesh.
Liseta – A true waxy ‘new potato’, high in water & low in starch. Liseta is an early producer best for boiling, salads, casseroles & soup.
Rocket – Another all purpose spud, mid way between floury & waxy.
