2 Soup Recipes for Winter recharge

Well I certainly crashed & burned after Wednesday this week!
Working in the cold & rain combined with a bit of excess at too many 40ths over the past few weeks has resulted in a run down & poorly me just in time for School Holidays!
I have been needing lots of soups & broths (& cups of tea – I am part English after all) to keep me going & this Curried Kumara Soup adapted from a recipe by Angela Casley in Viva Magazine really hit the spot as it is easy & tasty:
You will need 2 onions, 4-6 garlic cloves, 2T grated ginger, 3-4T mild curry powder, 1kg kumara, 1.5l stock (I used vegetable but a chicken broth would also work), a can of coconut cream & the leaves from a big bunch of silverbeet.
Add the sliced onions, chopped or crushed garlic & grated ginger to a pot with some olive oil. Cook until softened then add the curry powder & continue cooking until fragrant.
Add chopped kumara & stock & simmer for 25min until the kumara is soft. Add the coconut cream & chopped silverbeet for the last few minutes until silverbeet is wilted & then blend the soup until smooth.
